Recipe #25 Ultimate Ginger Cookie

This recipe appears in Barefoot Contessa At Home, page 192.

Last week was a busy cooking week for me. I made a total of three different recipes! Earlier this week I posted about the first two which you can read about here and here.

But, I still haven’t written about the dessert that I made last week — until now. For dessert last week I made the Ultimate Ginger Cookie. This was definitely a new type of dessert for me since I am usually not a fan of gingerbread. But, I have to admit, these cookies were tasty!

New Year, New Recipe

For the first weekend of 2021, I decided to try something new on the blog! Post a recipe. It is below and I hope you find the muffins as tasty as I did!

This weekend I was rummaging around the fridge and discovered that we had some cranberries that were waiting to be turned into something tasty. I decided that muffins would be something nice to have around. It’s been a while since I baked muffins.

Christmas Recipes

I hope everyone who celebrates had a wonderful Christmas!

I did not do too much cooking over the last few days, but I did end up making a Yule Log cake and keeping with the theme of this blog, I learned a few things.

I found a recipe on Sally’s Baking Addiction for the cake, but I chose to modify it a bit. For example, I did not use hazelnuts. Instead, I used peppermint extract and crushed up candy canes to give it a little peppermint flavor. Unfortunately, the cake ended up having a little too much peppermint flavor overall.

Christmas Recipes

Hello Readers!

I just wanted to make a quick post to tell you all that I will be making a Yule Log cake later this week for Christmas. This is something I’ve always wanted to make, but have been too intimidated by the thought of it to actually do it. However, due to the pandemic and spending more time in the kitchen, I now feel I am confident enough to do it!

I found a wonderful recipe that can actually be completed over a couple days. So, I will be making the cake and filling it on Wednesday. I will cover it with ganache and make some of the decorations on Thursday and then assemble everything for presentation Friday afternoon.

Preparing for Snow

Tomorrow, my state is expected to have the largest single snow storm in about 5 years! For my area, meteorologists are predicting around 15 inches of snow! It’s been quite some time since we’ve been forced to deal with that much snow in one go.

I am not a big fan of snow, so I’m not really happy about it, but I am looking forward to the possibility of not having work Thursday. Though, I’d rather be at work than having to shovel.

The time spent inside means I can have some time for myself and possibly make something. I purchased a new cookbook over the weekend, not an Ina one obviously. But I’m still excited nonetheless.

And if you’re wondering, yes. I did make something over the weekend. I made a breakfast item! It will post tomorrow.

Recipe #18 Chocolate Banana Crumb Cake

Here it is! The recipe review you’ve ALL been waiting for — at least I hope!

On Sunday afternoon, I made IG’s Banana Chocolate Crumb Cake and let me just say, it did not disappoint.

In the post announcing that this would be the recipe I would make this weekend, I said that the headnotes for the recipe were two sentences. After making it, I can see why Ina did that. The taste of this cake speaks for itself!

Following that pattern, this post will be short and sweet. Below is a photo of the finished product. I highly, highly, highly recommend you try this for yourself.

Snickerdoodle Cake

This recipe is NOT from Ina Garten, but I wanted to show off what I made because I was really pleased with myself and how it turned out! If interested, this recipe came from Sally’s Baking Addiction. The photos are mine, however. (Hers are much, much better!)

Snickerdoodle Cake is my new love! Three layers of cake with snickerdoodle pieces spread throughout, amazing cinnamon buttercream frosting, and just all around happy dancing!

Since this is not an Ina recipe, I will NOT be going into detail about the baking process. But…I do recommend you try this cake for yourself. It was so worth the effort!

Recipe #10 – Apple Pie Bars

Last night, I made a three course meal for myself and my family.

This post will discuss the dessert course for that meal. The other two recipes will be featured in a separate post.

Apple Pie Bars were an easy choice since we are in the heart of apple season here in New England. Plus, the salad I made had notes of fall flavors, so I figured this dessert was a great way to carry-over that theme.

These pie bars are completely different than what I was expecting! Instead of a thin crust that is found in a traditional pie, this crust is a little bit thicker and more plump. It also had some hints of flavor, until a regular pie crust. Which makes sense, since the pie crust taste shouldn’t outshine the flavor in the pie.

What really got me was the apple mixture and the topping!

The recipe called for both Granny Smith and Golden Delicious apples. I think this was the first time I cooked with Golden Delicious. I think this combination worked really well and probably adds some subtle flavor differences had I used only one type of apple. Mixed with sugar, lemon juice, and other common “fall spices,” the mixture simmered on the stove for about 15 minutes and in no my house smelled of pie!

The topping is more like a crumb topping, but it’s the crust dough with the flavor turned up. I added cinnamon and chopped walnuts and boy did it make a difference! I think the topping is the best part of this dish! If I make it again, I’ll probably add some cinnamon to the bottom crust, too.

While this does a little time to make since you have to peel, core, quarter, and thinly slice 6 apples, I think it is worth it and a great option to a traditional apple pie! The apple mixture appears to work well as a base for a regular pie, too.
