Magnolia Bakery Recipe 5: Peanut Butter Icebox Bars

Wow!

I didn’t realize how long it had been since I’ve made a recipe out of the Magnolia Bakery cookbook. Almost two months! Where has the time gone?

A few weeks ago, my family hosted some family members for a little get-together. It was the first one since the pandemic started and since we all had become fully vaccinated, and it was held outdoors, we felt safe enough.

I was asked to provide dessert for the occasion, which of course, I jumped on! I made two desserts. The first one was Ina Garten’s Boston Cream Pie and the second was these Peanut Butter Icebox Bars. I really liked this one since this was a no-bake recipe so it made my life a bit easier.

This recipe was one of the easiest ones I’ve ever made and the result? Decadent peanut butter clouds that were a huge hit!

While they were tasty and well-received, I did taste a little too much cream cheese for my liking. If I made them again, I will probably use more peanut butter or a little less cream cheese — or maybe both! Also, I ended up using way more caramel sauce than called for. I probably needed double the amount in the recipe to “thinly coat” my 9×13 pan.

The only other downside to these was the fact that they would “melt” quickly. There is no gelatin in these bars, so in order to stay firm, it relies solely on the cream cheese consistency. Once they are held in your hands, from either just handling them or eating them, they do warm up a bit and start to lose their shape. Leaving them out on a hot day? Forget about it, they will start to spread.

But have no fear! I’ve found a solution — well actually, my mom did. She froze some of the pieces. When we tried them a few days later, they tasted even better and stayed firm which I think improved the taste a bit. Thanks, Mom!

Cut these on the smaller side since they are quite rich. The crust alone was a treat!

It’s June!

Wow!

I can’t believe it! What happened to May? It appears that, to date, May was my least active month on the blog. There was a reason for that: things started to open up, activities began again, and my time became more constrained. However, some of the things I had lined up for this summer have fell through, which is too bad for me, but it’s great for the blog!

I have a personal goal for June: 6 recipes made during the month.

To be honest, doing two will be easy since my birthday is just around the corner. I will, obviously, be making my own cake. I’m also making cupcakes for a work thing next week, as well.

I am going to try to include at least one savory recipe in the mix, but, as you may have noticed, my focus on been on baking.

What Cake Am I Making For My Birthday?

It actually took me quite a while to find one that appealed to me. I knew I wanted to branch out a bit and make something outside of the Barefoot Contessa and Magnolia Bakery canon (even though the latter has some amazing cake recipes). After some searching online, I decided to stick to a tried and true baking blog: Sally’s Baking Addiction.

After paging through recipe after recipe, and one mouth-watering photo after another, I finally made my decision!

What cake is it?

It’s a surprise. You’ll have to wait until next week to find out!

Barefoot Contessa Recipe 49 Boston Cream Pie

Over the weekend, some members of my family got together for the first time since the beginning of the pandemic. It was nice to see some of these people after many months of not being able to do so.

With my new interest in baking, it was requested that I make dessert. Of course, I obliged. In fact, I made not only one, but two different desserts for the soiree.

The first dessert is one that caught my eye immediately upon thumbing through Ina’s latest cookbook. I’m not sure if it was the stellar food photography, the head notes, or the dessert itself. But Ina’s Boston Cream Pie was one I knew I had to make — and soon!

In the cookbook, Ina states that it took her almost 9 years to develop and perfect this recipe! And let me tell you: it is amazing! It was also well-received by the party guests. Ina is famous for creating simple recipes and enhancing classic dishes. Her Boston Cream Pie is definitely unlike anything you have tasted before. The additions of brandy and Grand Mariner allow the orange flavors to come alive and throw your taste buds a dance party!

This recipe was a multi-step process, but nothing was too overwhelming. It also allowed me to work on many different skills such as making pastry cream, chocolate ganache, and a sponge cake.

The finished cake! If you ask me, it looks like an over-sized Boston Cream Pie donut. But I guess that’s the point, right?

Barefoot Contessa Recipe 48 Chicken Piccata

Last week, dinner was a simple chicken dish. And I have to say, I think I like Ina’s recipe for Chicken Piccata better than any I’ve had at a restaurant before! The simplicity of this recipe makes it a stellar recipe for weeknights. But it’s also elegant enough to serve for a special occasion.

Chicken Piccata, in Ina’s version, is simply breaded chicken cutlets in a lemon sauce. I did make a few changes so the recipe would be healthier (and less messy) but I think the general idea still comes through.

Barefoot Contessa 46 Herb-Marinated Loin of Pork

For dinner last week, I decided to tackle my first of what will eventually be many Barefoot Contessa pork recipes. To be honest, pork has never been my favorite meat. The texture, to me, is in between chicken and steak and since I’m not a big fan of steak (or beef in general), pork has always hard to swallow.

Friday Cooking 4/16/21

I know this post is a little earlier than usual. But I’ve been having some busy days and I have to write when I have the time to write. So here it is!

This Friday, even though Spring has been here for almost a month, the meteorologists are predicting a chance of snow for my area. Yes, you heard me correctly. Snow!

To be fair, it is not entirely unheard of for Connecticut to see snow in April. It just hasn’t happened recently. Plus, we’ve gone WEEKS without true “winter weather.” So snow in the forecast has most people feeling a little bummed.

In an attempt to perk myself and my family up a little with the possibility of snow, I decided to make dinner for us and maybe even dessert. I’m not quite sure what I will be making, but it will be a main dish and at least one side dish. I will also try to whip something up quickly for dessert.

For those of you who are long-time readers of this blog, you may have noticed that the posts have been fewer and far between more recently. For that, I apologize. I hope that soon I can get back to my regularly scheduled program, meaning a more consistent, albeit not as often posting schedule.

Posting every day started to feel like “work” to me. I don’t want this blog to feel like work. In fact, one of the reasons why I started this blog was to have an outlet and something to look forward to when I wasn’t working.

That said, April will be a transition month for me and the blog. I’ll be cooking a bit less often and the blog will only get two to three posts per week. It will mainly be the recipes I made earlier or the week prior. An occasional herbal update will be included as well.

Barefoot Contessa Recipe 44: Roasted Parsnips & Carrots

I was tasked with making the vegetable dish for Easter Sunday dinner. Naturally, I turned to Ina. I wanted something easy and that could be cooked on the grill. The oven was over-taken by the ham.

By needing the grill, I was left with finding recipes for roasted vegetables. Thanks to a cast iron pan we have, I was able to roast the vegetables in a similar manner as if I had been using the oven.

So, I settled on carrots and parsnips, these were a big hit with the family when I braised them a few weeks ago.

Since I cooked them on the grill and in cast iron, the vegetables cooked much quicker than they would have in the oven. To be honest, they were a little OVERDONE, but they still tasted fine.

Barefoot Contessa Recipe 42: Couscous with Toasted Pine Nuts

This recipe can be found in How Easy is That?, page 195.

Even though Salmon with Melting Tomatoes had a built-in side dish, I still needed one more thing to truly round out the meal. Enter: Couscous with Toasted Pine Nuts.

I still had some pine nuts from when I made gremolata a few weeks back. At least that’s where I think I used the pine nuts originally. I can’t really remember. So many recipes. But I wanted to use them up since I didn’t really know how long they would “keep.” I was storing them in the fridge since they are nuts, after all. And since nuts have oil, they can spoil! (Thanks Rachael Ray)

Luckily this recipe used them all up. Sadly, I will have to buy them again at some point and fork over almost $10 for like 5 ounces of nuts. But that’s a story for another time.

Barefoot Contessa Recipe #38 Chicken Thighs with Creamy Mustard Sauce

I had off from work on Monday, so I was asked to make dinner. Of course, I obliged. Usually, when it’s my turn to make dinner, I get to decide the meal from scratch entirely. But not Monday. I already the main ingredients to work with: chicken thighs. So, naturally, I seized the opportunity to cross another Barefoot Contessa recipe off the list.

Using the Master Recipe Index, I quickly found a recipe that would work. It was even better because we had nearly everything to make it. I only had to purchase one ingredient. Score! The creamy mustard sauce recipe calls for two types of mustard. One of which is one my family doesn’t really use. The amount in the recipe was only a teaspoon, so I opted to leave out the whole grain mustard entirely. But, you wouldn’t know the difference anyway.

This recipe cooked up nice and quick and was packed with so much flavor thanks to the Grey Poupon dijon mustard. The sauce was creamy despite not having any dairy product. This meal serves a crowd and it will definitely be a crowd-pleaser!

Overall the cooking time was off from what the recipe said it would be. I’ve found this to be typical of Barefoot Contessa recipes. However, in this case, I think it was due to the fact that I had really GIANT chicken thighs to cook. I had to spread them over two pans! They were so large and there was so many!

But, I just adjusted the recipe to compensate for the large number of thighs and went with it! This dish has so many different flavors that it will leave you wanting to have seconds…maybe even thirds.

I made dessert, too! That was the original plan for Monday. Just make a dessert. I chose to do something I’d never done before and make meringue. Check back tomorrow to see how they turned out!

February 2021 Cooking Roundup

Look at me! March is almost half over and I realized I never posted the February Cooking Roundup! Well, better late than never, right?!

February was not as prolific for me as January was, but I was still able to make a few recipes. I am slowly but surely chipping away at that 1,056 recipe total! In February, I made a total of five Ina Garten recipes and two originals!

After taking the first week of February off from cooking, I made a wonderful vegetable soup that was my own original recipe! You can see how it turned out here. If you make this recipe, let me know how it turned out for you!

Next, I made another original recipe. This is also a recipe that I’m still working on perfecting. But for now, my Easy Sweet and Sour Chicken recipe is on the blog for all who care to enjoy.

The first Barefoot Contessa recipe of February came around halfway through the month. It still amazes me that I was able to get five recipes down in only two weeks’ time. This was Recipe Number 31: Perfect Roast Chicken. I still can’t get over the fact that it took me this long to make Ina’s signature dish!

Next, I tackled my first fish dish of Ina’s. The salmon was so tasty and will definitely become a staple recipe in my house! To go along with the salmon, I needed a side dish. After all, salmon on a plate is a little bland and unappealing. I wanted something vibrant and yummy to help enrich the plating of the salmon. Thus, I made Recipe Number 33: French String Beans. While the string beans are the pain attraction in this side dish, the peppers and onion help to bring the flavors together.

I rounded off the month with some comfort food! Banana Rum Trifle, which I’m still dreaming about. And finally, another Barefoot Contessa classic: Macaroni and Cheese.
